For those looking for a last minute dish for to celebrate this Thanksgiving weekend, here's a quick and easy vegetable roast that is sure to satisfy your loved ones.

Ingredients:
2 sweet potatoes, chopped
3 parsnips, chopped
1 1/2 cups of carrot, chopped
1/2 tsp Himalayan salt
1/4 tsp black pepper
2 tbsp extra virgin olive oil
1/2 tsp garlic powder
2 tbsp Dijon mustard
1/4 cup real maple syrup
1.Preheat oven to 425. 
2. Place carrots, parsnips and sweet potatoes on a baking pan. Coat with olive oil, Himalayan salt and black pepper.
3.Roast in oven for 15 minutes. Take out, toss on baking sheet and cook for another 15 or until vegetables are soft.
4.While vegetables are roasting, mix maple syrup, Dijon mustard and garlic powder.
5.When vegetables are done, drizzle the maple syrup and Dijon sauce over. Make sure to coat all vegetables well.
